Chinese New Year Banquet at the Maple Garden Duck House

Dish: Maple Fruity Prawns
Serves 4 - 5

For the Prawns:
Use 8-15 prawns
Shell and devein
Marinate with egg white and dash of baking powder

For the sauce:
Prepare sauce in advance: Use blender

Ingredients:
Fresh Lemon Juice
Pineapple Chunk
Condensed Milk (amount depends on desired sweetness)
Mayonnaise
Sugar
Vinegar
Blend to thick creamy consistency

For the Honey Walnuts:

Heat honey to thin liquid form
Add walnuts to coat with hot honey
Strain and let cool

Prepare Prawns
Add small amount of corn starch to coat for crispiness. Heat oil in WOK and cook stir fried. After cooking, strain oil.
Heat sauce
Place hot sauce over Prawns and serve with Honey Walnuts.
