Dish:
Happy New Year Cubed Steak
(Henry's Evergreen)
Ingredients:
1 pound filet mignon
1 Chinese duck liver sausage
10 pieces dried mushrooms
2 oz. Snow peapods
3 water chestnut slices
4 stalks of Chinese choy sum (green vegetable)
Oyster Sauce
Light soy sauce
Instructions: |

Cut Filet Mignon in cubes. Marinate in a mixture of 1/2 oz. Light Soy, 1/2 teaspoon sugar and 1/4 teaspoon of white pepper

Clean choy sum and chop to 1 ½ inch pieces

Soak mushrooms in warm water for at least ½ hour, then cut in half

Clean the peapods
|

Clean the sausage, then steam the sausage for 10 min., let it soften a bit, then slice them long and thin
|
Cooking: (Using 2 burners) |

Fill skillet 1/3 with water, boil

Use other burner to heat your wok
|

When water boils, cook the choy sum for 40 seconds, then throw in all the other vegetbles (waterchestnuts, mushrooms, and peapods). Cook for additional 90 seconds. Set aside
|

When the wok is hot. Add 1 soup spoon of vegetble oil. When oil is heated and starts dancing, add 1/4 teaspoon of garlic, stir a little and stir in the filet mignon. Add 1 ½ teaspoon of cooking sherry. Then stir fry them for 1 minute. Add the sausage, stir fry again for 20 seconds. Add the
vegetables in and stir fry. (You should have some residual water left with the vegetables. If not add in 2 spoons of water.)

Cook for 30 seconds, and then add 1 ½ tablespoons of oyster sauce. Stir thoroughly and add a little cornstarch (it should be already disolved). Stir thoroughly again and serve
