Vanilla Mushroom Broth


Dish:
Vanilla Mushroom Broth
From Marcus Sauelsson, Chef at Acquavit

Ingredients:

1/2 quart chicken stock
1/2 quart clam juice
2 shallots
1 driedvanilla bean
2 cups dried mushrooms
1 sprigsof thyme
1tsp. Truffle oil
1tblsp. olive oil
2 cloves of garlic
Saltand Pepper

Instructions:
In a pot add the olive oil saute shallot and garlic for about 2 minutes add vanilla bean and dried mushrooms, clam juice, chicken stock and thyme let simmer for 30 minutes, then strain. Add the truffle oil right before serving.
