St Clair Estate Pinot Noir 2013
Rich garnet. Color. A complex and perfumed nose showing blackcurrant, violets and wild flowers interlaced with layers of spice, vanilla , and freshly roasted dark coffee. Rich and concentrated palate of ripe black cherries and blackcurrants combined with spice and violets. A velvety tannin and fresh coffee structure is supported by perfectly balanced acidity and a long persistent finish. It is drinking beautifully now or with careful cellaring will mature into a more complex wine that can be enjoyed for the next 8 to 10 years or beyond.

St Clair Block 16 Pinot Noir 2010
The fruit was harvested when it had reached full physiological ripeness and maximum flavor maturity. At the winery the fruit was held cold for five days prior to fermentation to help extract maximum flavor and to enhance color stability. Selected yeasts were used to carry out the primary alcoholic fermentation during which the fermenting must was hand plunged up to six times daily at the peak of fermentation. This wine contains a blend of clone 5 and clone 115, which were fermented separately. At dryness each clone was pressed to tank then racked off gross lees. Each clone was then dropped into a mixture of 54 per cent new French oak and older seasoned 225L oak barriques. Barrels were regularly tasted until the right balance was achieved (ten months). During its time maturing in oak the young wine underwent malolactic fermentation. The wine was then carefully extracted from oak, blended and carefully prepared for bottling.

Dark garnet color with purple hues.

A concentrated nose with black cherry, wild blackberry, sweet ripe raspberry, violets, dried thyme and spice.

A luscious and elegant full palate with delicious black fruits - boysenberries, blackberries, and blueberries. A refined, elegant structure supports a rich complex toasty finish with spice and amazing length.

This is a complex and concentrated wine which is perfect for drinking immediately. With careful cellaring this wine will continue to develop for years to come.

Beautifully matched with duck casserole, rare venison steaks or warm pumpkin and feta salad.

St Clair Block 4 Pinot Noir 2009
The grapes harvested for this single vineyard wine are from Dijon clones 667 and 777 with a small amount of 115. The fruit was harvested when it had reached full physiological ripeness and maximum flavor maturity. At the winery the fruit was held cold for four days prior to ferment to help extract maximum flavor and to enhance color stability. Selected yeasts were used to carry out the primary alcoholic fermentation during which the fermenting must was hand plunged up to six times daily. At dryness each batch was pressed to tank and then racked off gross lees to stainless steel tanks. The wine was then dropped into a mixture of 53 per cent new French oak for ten months where it underwent malolactic fermentation. It was then blended and carefully prepared for bottling.

Bright ruby color. Aroma of dark cherries with thyme and oak.

An elegant Pinot Noir with a well-rounded full palate. Well balanced acidity and ripe tannins with luscious flavors of ripe dark cherry and spicy oak. Aged in French oak with a big long and spicy finish.

Perfect for drinking immediately this wine will continue to develop for at least another 5 years from vintage date.

An ideal match with roast poultry, full flavored fish, spring lamb or barbequed beef.

The favorite of this Flight.

Flight III Votes Full Retail Price $
Hope Estate Chardonnay 2012- Hunter Valley
Delicate peach, pear and ripe citrus fruits mingling with vanilla and light toasty oak. This is a beautifully crafted wine. Full flavored with ripe stone fruits in the front, the oak is subtle and well integrated and provides support to a palate that has texture; balance and just great mouth feel with a long, persistent and crisp finish. This medium bodied chardonnay will complement most chicken, pasta and veal dishes. As long as the food is not too spicy or generally overpowering, it will provide a good match.
$16.99
Hope Estate The Ripper Shiraz 2011
Inky dark red, black with purple hue color. Generous blackberry aromas and dark cherry fruit mingle with undertones of licorice, mocha and cedar oak. The oak maturation has enhanced the spice and mocha characters of the wine while some open fermentation has helped enrich the fruitfulness and general complexity. This full bodied shiraz will complement any red meat dish or white meat with rich sauce. .All liked.
